Ok. My dealer says there actually is a way to charge to a percent using app. There is apparently two options, 80 or 100 percent. Ive exhausted my search and I can't figure it out. I apologize if this question has been asked but I can't find answer anywhere ..

I get 2 percent per hour on level 1
Unsure what level 2 charger hourly average?

Level 2 should be about 8 percent.

Perhaps there's a plan for setting this in the app (we can hope!), but it's not there at present.

Level 2 should be about 8 percent.
That should be for the large battery, for the small battery it would be over 10 percent per hour.

I have the small battery its 8% per hour on the 24 amp. Have not tried 32 amp or 40 amp but most likely true about 10%
For now the ODBII commands and probes needed for things like Torque pro or LeafSpy to work on Ariya appear to be unknown. Had they been available you could have reasonably expected a 3rd party app. For now I suspect a smart plug with some Alexa routines is the best hope. Have you looked into connect integration for Alexa? Leaf had charging commands, if it was updated for Ariya you might be able to create some time based routines that met your needs.
